Directions

1. Prepare the Sweet Potatoes Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly, wrap them in aluminum foil, and place them on a baking sheet. Bake for 40-50 minutes, or until they are tender and easily pierced with a knife.

2. Cook the Filling While the sweet potatoes are baking, heat olive oil in a large skillet over medium heat. Add the ground turkey to the skillet and cook, breaking it apart with a spatula, until it’s fully browned. Stir in the shredded carrots, zucchini, white beans, and seasonings: salt, pepper, cumin powder, oregano powder, garlic powder, onion powder, and turmeric powder. Cook for an additional 5-7 minutes, allowing the flavors to meld.

3. Assemble the Stuffed Sweet Potatoes Once the sweet potatoes are baked, remove them from the oven and let them cool slightly. Slice each potato lengthwise and gently fluff the interior with a fork to create a pocket for the filling.
